Preparation
- In a large bowl, combine mango, cucumber, tomato, jicama, corn, onions, cilantro, lime juice, horseradish and turmeric.
- Mix well.
- Add black beans and avocado.
- Mix gently.
- Season to taste with salt and black pepper.
Yield: Eight (1 cup each) servings
