Fuel your body with plant-powered chili

Toss in your favorite veggies, sprinkle in your special chili seasoning and let the crock pot do the work. Packed with beans and vegetables, this Blue Zones* recipe will warm you up all winter. Set it and forget it — when you return home, a delicious, healthy meal is waiting for you. Enjoy and nourish your body with every bite.

Ingredients

  • 1 pound red or kidney beans
  • 4 teaspoon olive oil
  • One large onion
  • Four carrots
  • Six stalks celery
  • Five cloves of garlic
  • Two green peppers
  • Two habanero peppers
  • One large can of stewed tomatoes
  • 8 cups vegetable stock (or 4 cups veggie stock and 4 cups water)
  • Salt and pepper
  • One package vegan/plant-based hamburger or soy crumbles (optional)
  • One avocado, cubed, for garnish (optional)

 

Preparation

  1. Soak beans overnight.
  2. Chop and sauté all vegetables and hamburger (if using) until onions are clear, but not burnt.
  3. Combine all ingredients in a crock pot and let stew all day (alternative method: Let simmer on stove for 70 minutes).
  4. Salt and pepper to taste.
