Strawberry-vanilla chia seed pudding

Wake up to a little magic in your morning. This creamy, dreamy chia pudding, courtesy of Blue Zones*, does all the work while you rest, so you can start your day with something delicious, nourishing and effortless. Packed with protein, fiber and omega-3s, chia seeds transform overnight into a rich, velvety treat. Top it off with fresh strawberries for a burst of sweetness and a boost of Vitamin C. Now that’s easy, tasty and totally worth waking up for.

 

Ingredients

  • 3 cups unsweetened almond milk
  • 2 teaspoons vanilla extract
  • 3 tablespoons maple syrup
  • 1/2 teaspoon cinnamon
  • 1/2 cup + 2 tablespoons chia seeds
  • 3 cups fresh strawberries

Preparation

  1. In a bowl, whisk together unsweetened almond milk, vanilla extract, maple syrup and cinnamon.
  2. Pour liquid mixture over the chia seeds and stir until seeds are incorporated. Stir it well, so that none of the chia seeds stick together.
  3. Let sit for an hour or in the refrigerator overnight. Mixture will thicken substantially. Soaking time is vital.
  4. In the morning, rinse and slice fresh strawberries. Stir chia pudding and top with fresh strawberries.
